Nah, Chinese people eat some really weird things so their bodies are used to weird food or weird ways to prepare food. But yeah, I definitely agree that overall it's a pretty nasty video of how they prepare food. Just pretty crazy.

i mean ill eat tuna fresh off the boat, but we usually fillet it first on the docks and wait for it to stop moving

Actually, from what I understand that's pretty commonplace over there. Fish that are old [read: rotten] are a huge problem over there, so one way to ensure that the fish you just bought isn't 3 weeks old is to have it still moving on your plate. *shrugs*
