Just thinking out loud... Make 100 percent sure your exhaust is connected and bolted down fully everywhere? O2 bung?
Might as well leave no stone unturned, before it goes in.. The injectors.. Who knows.
Yeah, gonna check the how-to's and maybe run through what i can before Saturday. Thanks, sounds like nasty weather out there, good luck! I'll keep updating this as it sounds like other guys have been experiencing this as well.

Sorry for the delay in this, was in the shop a bit longer than anticipated.
Okay so here it is.........shouldn't surprise anyone, it was the valves! The shop did a full adjustment and she purrs like a kitten now and life is soooo good again
So for anyone who has this issue in the future, see OP for the symptoms and I would recommend get your valves checked. Even though I only have 29,000 km on it (~1800miles), it was still the valves. They actually detected some knocking as well, which pointed to the valves right away I guess. I couldn't hear it at all until they pointed it out to me. Anyway, they cut me a good deal on the price ($270.00) so life is great now.
I did get some video of the problem before I got it fixed that I will post in the proper forum to help anyone else in the future diagnose their issue. Thank you to everyone who contributed to this post, I really appreciate your help and the confidence to do my own troubleshooting. Thanks to all of you.
