It's not so much that starting on a 600 supersport means you're going to crash it or hurt yourself. The chances for that are certainly worse, but many have managed to do it and stay alive / uninjured.
A smaller, more forgiving machine is just waaaaaaay easier to learn on, and will make you a better rider, much faster. There's nothing that's going to stop you from grabbing a supersport in a year, after you put a few thousand miles on a cheap, smaller, more comfortable bike - and you'll end up being a way better rider for it.
The question really is - are you interested in bikes to own one and look at it and show it off, or do you want to learn how to really ride the damn thing?
Whatever you do, at least take the MSF course to get your license.
