Sprockets and ish

So what's the deal with after market sprockets. I know that different ones give different outcomes in terms of torque. Less teeth more teeth, what does what? I bought my bike used and I'm positive I have aftermarket sprockets because I've tried and tried power wheelies and its just not gonna happen. I was told I had sprockets that are for low end acceleration so it takes away from my bikes ability to do wheelies. Hit me with the knowledge and info.

Sprockets that help low-end acceleration would help you do wheelies, not hurt.
