Ok so I was recently driving my 2005 r6 at about 45 and my chain flew off , I have now got to the sprocket to see if there is any damage , could someone tell me if there is any motor damage , and also what the name of the bolt is in the middle of the sprocket ??

Everything looks okay.

Front sprocket nut. Should be a 32mm.

a quality chain, generally, will not "fly off". Ive been amazed at the instances of where this has been happening lately. Based on the pic of your countershaft Im going to assign "neglect" as the cause...lol.
