Due to a recent incident with my bike, I'm having to replace the headlight assembly. Anyhow, I really prefer the dual lows/highs of the 05 model, instead of the single low/high setup of the 07. How hard would it be to use the 05 assembly on the 07? How much work would be required? Would I need a headlight assembly from both years, or can I just modify the 05 assembly to fit on my bike?

I havent seen that done, but use the search button in the how to section, or appearance and exterior mods section on this forum there are some great write ups on the subject.

you'll need an assembly for each year and then have to retrofit the old style innerds into your newer style housing. And some custom wiring to make it work the way you want. At that point, it would be cheaper and more effective to buy some HID projectors off ebay or somewhere and retrofit those instead of the older style headlight.

HID projectors range around $120 + you'll need HID ballasts and bulbs
03-05 headlight assemblies are usually around $300 or more
(from what I've seen anyway)
