If you start lowering the bike, you'll completely change the handling.
The lower the back is, the harder it will be to turn.

I can't flat foot mine either. I normally flat foot one side(left) and keep my right foot on the brakes.

Get a lowering link (dog bone) they cost around $25 on Ebay.... this will allow you to lower the seat height. You will have to adjust the front forks too. I run on track day with this girl that shed a full 2" on her bike and she has no problem dragging knee or passing guys on the track.
