I’m trying to readjust the position of my brake lines. If I crack open the banjo bolts just enough to rotate the lines slightly, does the system need to be rebled?

if the copper washers are good... I would just barely loosen the banjo enough to rotate but not break the copper seal. Usually the torque to tighten is ~15ft lbs. I might try to loosen with only 5-8ft lbs to see how it goes. May have to use a crescent wrench to clock the fitting.

Yeah you'll need to bleed if any air at all gets into the system. If your lever gets mushy, bleed. It isn't too bad of a job anyhow.

Loosen any part of the hydraulic lines that see pressure, (with possible exception to the bleed valve,) and you'll need to bleed. Any liquid that escapes must be replaced with something, and that will be air. When you do bleed, be sure not to over-tighten the caliper bleed valves or may run into problems with sealing. Look up your torque specs. IIRC the master cylinder bolt you're referring to might be 22 ft-lbs.
